• The beauty of chocolate leftovers...

    Today I was making a beautiful banana and chocolate cake and the filling was too much for the mold. Now, if I was making a traditional baked cake I would probably feel dissapointed that I had to waste some of the mix, but being it a RAW cake it made me happy :)

    Yes, happy because I had some chocolate mix to experiment with-there is nothing better to be in the kitchen with some delicious chocolate filled bowl thinking how to eat it!

    I took the batter that was a bit liquid, added some melted coconut oil to firm it up, some more raw cacao powder, mixed well and voila! chocolate mouse. Honestly it was so good that we have eaten the three terrines I put in the fridge only 1 hour ago.

    If you are ever in the mood for something chocolately but still light, try this recipe below, it should be enough for two people.

    1 1/2 bananas

    2 tablespoons raw cacao powder

    2 tablespoons agave syrup

    Blend until smooth and then add

    2 tablespoons coconut oil

    1 teaspoon sunflower lecithin

    Put the mixture in container or molds and refrigerate until mouse consistency- about 30 min.... delish!
